  1. 1) Mix Beans, Rice, Tomatos, Taco Seasoning, Onion, and Jalepeno.
  2. 2) Break taco shells in half and cover bean mixture.
  3. 3) Mix Avacado,Yogurt, and 1/8 tsp. sea salt or to taste, mix well, spread and cover taco shells
  4. 4) Peel and quarter potatos and boil in uncovered pot till tender, approximately 10 minutes
  5. 5) Drain into colinder, put back in. Pot, add milk and margarine, mix with hand mixer till smooth with no lumps.
  6. 6) Cover Avacado, yogurt mixture with potatos
  7. 7) Spread frozen corn over Avacado mix.
  8. 8) Trickle taco sauce over Avacado mix
  9. 9) Spread Potatos over. Taco sauce and top with remaining 1/4 cup shreaded cheese.
  10. Bake in oven at 350 degrees 45 minutes.
