"This is my recipe for a delicious, easy apple pie (tho my daughter says "easy as pie" means easy as eating, not easy as making). The chili powder gives the filling a little zest without being otherwise noticeable. Do try it!"
Melt the butter in a large saucepan and stir in the sugars. Add the flour and spices and stir until blended. Then stir in the cider and vanilla.
Peel, core, and slice the apples and add to the mixture. Bring to a boil, then simmer for about 8 - 10 minutes until the sauce has thickened and the apples have begun to soften.
Turn into the unbaked pie shell and bake on the bottom rack of the oven for 15 minutes at 425 degrees. (Place a cookie sheet covered with aluminum foil below to catch any drips.)
After 15 minutes, turn the heat down to 350 degrees. Take the pie out and sprinkle the topping evenly over the top and then return the pie to the bottom shelf of the oven for another 20 minutes, or until the filling is bubbly and the topping is browned.
