  1. Sort beans taking out rocks and split beans. Rinse once. Put beans in large pot and fill with water to cover beans. Place in refrigerator overnight.
  2. Put on stove on medium heat until water is boiling (about 30minutes).
  3. Chop onion and add to beans. Cook package of bacon as you normally do. Remove 1/2 of the bacon grease and add to your pot of beans.
  4. Reduce heat to low (simmer) for 3 1/2 hours stirring occassionally and adding water as needed. Once your beans have cooked for 3 hours total add in the rest of your bacon grease.
  5. Remove beans from pot after they are fully cooked. Place in mixing bowl and mix on low. ( I do the same with my mashed potatoes!) Add salt to taste.
  6. I serve with shredded muenster cheese on top and this is always a hit. Just like my grandmother used to make it. Enjoy with enchiladas or tacos or in a bean burrito!
