Pesto Quinoa Wraps

"I love this, because it is is fast, easy, and cheap. Plus, it is good served the next day. I usually serve the quinoa and tortillas warm the first time I make it and cold as leftovers for lunch. I saw a picture of a quinoa wrap on Tumblr and decided to expand when I was with my dad who looked over my shoulder and said "that looks good." I serve this so people can put the wraps together themselves, that way I know how much of each ingredient I have left. It can be an appetizer or a main dish!"

Original recipe yields 4 servings

  1. Add quinoa to water in a saucepan. Heat until boiling. Then let simmer for 20 minutes.
  2. While quinoa is cooking prepare vegetables.
  3. Put quinoa in a medium sized bowl. Mix pesto until quinoa is coated evenly. Cover bowl to keep warm.
  4. If you want, heat tortillas in microwave.
  5. Have everybody put together their wraps and enjoy!
