"Being a huge fan of Mexican main dishes and cottage cheese, I came up with a great recipe for a cheese enchilada casserole that uses cottage cheese."

  1. 1. Preheat oven to 375°F.
  2. 2. Combine first 6 ingredients. Arrange 3 tortillas in a 1½-quart baking dish coated with cooking spray. Spread half of cheese mixture over tortillas. Repeat procedure with 3 tortillas and remaining cheese mixture; top with remaining tortillas.
  3. 3. Pour taco sauce over tortillas; sprinkle with Monterey Jack cheese. Bake at 375° for 20 minutes or until cheese melts. Sprinkle with 2 tablespoons green peppers.


Needs more cowbell, I mean cottage cheese. Fun though. I really like how the cheese refuses to melt since it's just little curd drops. Thanks for sharing!
