To make the glaze, combine the preserves, lemon juice, bourbon, honey and red pepper in a small saucepan; bring to boil, stirring occasionally. Reduce the heat and simmer until slightly thickened, about 8 minutes. Let cool.
Preheat grill to medium.
In a small bow combine ginger, lemon zest, garlic, salt and black pepper. Rub on the pork chops. Place on grill over medium heat. Grill, covered.
Baste pork chops with glaze every few minutes until fully cooked.
