  1. Combine the first 5 ingredients in a bowl large enough to hold the chicken. Add the chicken and turn to coat.Cover, refrigerate and marinate the chicken for 4 hours, turning occasionally.
  2. Preheat oven to 375 degrees
  3. Place chicken in a baking dish. Pour any marinade from the bowl over the chicken, then season with salt and pepper.
  4. Bake for 35 minutes.
  5. Remove from oven and baste chicken with pan juices. Top and surround chicken with olives and feta cheese.
  6. Bake 15 more, or until chicken is cooked through.
  7. Sprinkle chicken with parsley.
