"I created this recipe as a mish mash of other recipes because I couldn't find anything that really suited my taste. This recipe is very close to the Vietnamese curry that was served at one of my favorite restaurants. Served over basmati rice and vegetables -- yum!"

  1. Rinse lentils until water runs clear. Place lentils in a stockpot with water and bouillon cubes. Heat until boiling, then reduce heat and simmer.
  2. In a separate pan, heat oil. Add curry powder, red pepper flakes, tumeric, cumin, chili powder, and cinnamon. Add onion, garlic, and ginger and saute until tender.
  3. Add curry mixture to lentils and simmer for about 20 minutes, or until lentils are soft.
  4. Add coconut milk and cook an additional 10 minutes.
  5. Serve over steamed basmati rice and steamed vegetables (your preference -- I like potatoes, sweet potatoes, green pepper, and cauliflower).
