Lemon Icebox Pie

"This recipe came from my neighbor, Mrs. Thelma Roberts. She brought this pie to my house when I was recovering from surgery. Though it is a well-known favorite, still it was so good to us that I had to get her particular recipe. It turns out perfect every time. That egg-white meringue is the perfect compliment to the filling."

  1. Combine milk, egg yolks and lemon juice together,mixing until well blended. Pour into pie crust. Set aside.
  2. Use the egg whites to make the Good Meringue Recipe.
  3. Spread meringue over the filling and bake at 400* until peaks begin to brown. Remove and let cool five minutes. Store in fridge until ready to serve.
