Baked Sweet Potato with Onions and Red Peppers

  1. Preheat oven to 350 degrees F.
  2. Roast sweet potato 45 minutes, or until tender.
  3. Heat olive oil in a skillet over medium heat. Saute onion, red bell pepper, and chili pepper 15 minutes, or until very tender.
  4. Stir in veggie beef and cook until heated through, about 5 minutes.
  5. Slice cooked sweet potato in half lengthwise, and top with the skillet mixture.
  6. Place yogurt on top and season with salt and pepper.
