  1. Heat oven to 350 degrees.
  2. Place chicken,skin side up, in a single layer in a 9 by 13 shallow non-aluminum roasting pan. Scatter garlic and butter on chicken. Sprinkle with oregano and salt and pepper. Cover pan with foil.
  3. Bake 45 minutes. Remove foil. Turn broiler on high. Bast chicken with pan juices and broil until browned, turning and basting chicken until both sides are brown and crispy, about 15 minutes.
  4. To serve, transfer chicken to a large platter. Pour pan juices into a small bowl and skim off fat. Serve pan juices separately.
