  1. Insert a glass bowl in the fridge for 30 minutes before preparing.
  2. When cutting the bison use a sharp knife and cut into very fine dices.
  3. In the glass bowl mix all the ingredients.
  4. Using a rubber spatula, gently fold together ingredients. You want a nice loose tartare, not a gluey texture.
