Original recipe yields 4 servings

  1. Wash and slice the potatoes into thin slices and set aside
  2. Preheat the oven for 350ยบ
  3. Rip up the basil leaves into small shreds
  4. In a small bowl mix the basil, garlic, chili powder and sea salt, black pepper and peppercorn (to taste)
  5. Mix the seasoning until well blended and add in the potato slices
  6. Place the seasoned potatoes on a cookie tray and bake in the oven for 3- 5 minutes or until soft * do not layer the potatoes, make sure each slice is exposed
  7. Take the potatoes out of the cookie tray and separate into 3 piles
  8. Wrap each bunch of potatoes in tin foil *add more seasoning on top if you wish
  9. Sprinkle the potatoes with 1 tablespoon of cheese per packet before covering
  10. Bake in the oven for an additional 2-3 minutes
  11. Unwrap the potatoes from the packets, serve and enjoy!
