Preheat the oven to 450 degrees. Roll out the pie crust and line a 9-inch pie tin with it. Prepare the edge as you'd like. Line the crust with two layers of aluminum foil. Bake in the oven for 8-9 minutes, pull out the pie tin and remove the foil. Bake for another 3-5 minutes or until the crust is set and dry. Remove from the oven and lower the temperature of the oven to 325.
Mix together beaten eggs, milk, onions, salt, pepper, and nutmeg. Stir in broccoli and flour and mix well.
Place the pieces of brie scattered throughout the hot pie crust. Pour the egg and broccoli mixture over it and place in the oven for 40 to 50 minutes or until a knife comes out clean when placed in the center.
Let stand 5 minutes to cool, serve warm and enjoy!
