Weekend Grab & Go Egg Bites


"I prefer to have the weekend relatively work free so I can spend it with my family. This make ahead leaves lots of leftovers, is full of protein and everything you need for breakfast. Even if you don't like egg salad (me) try this, I think you will be surprised at how many 'tastes' you take. Borrowed from Ree Drummond's recipe 'Make Ahead Muffin Melts' with modifications."

  1. To a large presentation sized bowl, add the mayo, mustard, garlic powder, and Worcestershire. Mix well as this will be your dressing.
  2. Add the eggs, cheddar and bacon and mix lightly but at least until the eggs are coated. At this point taste and salt & pepper.
  3. Toast and butter the english muffins. Add a heaping spoon of egg mixture to each half muffin and put on a baking sheet. Broil until desired cheese brown-edness is achieved.
  4. Eat or put in fridge for reheating in microwave later (or eat cold).
