"Greek Roasted Garlic Chicken Sausage Wraps"

  1. In large fry pan over medium high heat, place olive oil.
  2. Add garlic and chicken sausage and cook, stirring about 5 minutes.
  3. Remove chicken and add onion, pepper and minced rosemary
  4. Cook 5 minutes or until vegetables are tender
  5. In large bowl, mix together chicken sausage, sautéed vegetables, ½ of the tomatoes and olives and 1 cup of the crumbled feta cheese
  6. Divide among 8 wraps, placing mixture on half of each
  7. Roll mixture into crepes jelly-roll style, folding in sides, to contain filling
  8. Place wraps in large glass baking dish and heat, covered, in 350° oven for 15 minutes
  9. Remove wraps to center of large platter.
  10. Sprinkle with remaining feta cheese.
  11. Spoon remaining tomatoes and olives down center of wraps.
  12. Garnish with rosemary sprigs.
