  1. Preheat oven to 375 and spray a baking dish lightly with oil.
  2. Halve the squash lengthwise and place in dish cut side up - spray/lightly brush oil over the top.
  3. Bake (or microwave) squash until just tender.
  4. While squash is baking, place butter in a pan and saute apples until warmed, but still a bit firm.
  5. Cut sausage into 1/2" pieces/chunks.
  6. Add sausage to apples and heat until warmed through.
  7. Scoop out pulp (save "skin" if you want to serve casserole in them) - leave oven on.
  8. Mix the squash with the sausage/apple mixture.
  9. Combine brown sugar, sage, salt/pepper, pecans.
  10. Fold the sugar/pecan mixture into the squash/sausage mixture.
  11. Place stuffing in a casserole dish or in the skins from the squash.
  12. Bake another 25-minutes.


squash took awhile to bake; i ended up microwaving it to speed up the process - another similar recipe used 2 (1lb) butternut squashes. Tasted really good - a big hit with my husband, who doesn'...
