Dutch Lettuce, Bacon Mashed Potatoes

  1. Hard boil 4 eggs, run under water to cool. Peel and cut into 1/2" chunks and set aside (refrigerate)
  2. Fry the bacon so that both sides are lightly browned and crisp. Put aside on paper towel and pat dry. Do not discard the bacon grease (save for later step). Cut the bacon into 1/2" bits and set aside.
  3. Peel and dice the potatoes and boil until soft. Strain and put the dry potatoes into a pot to mash. (I personally squeeze the potatoes through a potato ricer but mashing them is perfectly fine).
  4. Slice the butter into pats and mash into the potatoes with some of the milk. The consistency should be a bit dryer than traditional mashed potatoes as we will be adding other liquids.
  5. Add the chopped egg, bacon, and diced onion to the mashed potatoes.
  6. Cut the leaf lettuce into 1" squares and lay on top of the mashed potato mix.
  7. Heat up the bacon grease and pour some of the grease over top of the lettuce to wilt the leaves.
  8. Mix the lettuce into the potatoes.
  9. Add 1/4 cup of vinegar and salt and pepper to taste. Add more vinegar up to 1/2 cup as needed, to taste.
  10. If potatoes are too dry, add remaining milk to achieve desired consistency.
  11. Can be warmed back up in a covered casserole dish in the oven. Serve with cruet of white vinegar.
