Raw Apple Dessert with Brown Butter Icing

  1. Preheat oven to 350°. Grease and flour 8 x 8 square baking pan or a 9 inch round pan.
  2. Dice apples. Place in bowl of cold water with a couple pinches of salt to prevent browning.
  3. In a medium bowl combine flour, xanthan gum, cinnamon, baking powder, baking soda and salt.
  4. In a mixing bowl, cream butter and sugar. Add eggs and maple syrup. Mix well. Remove mixing bowl from mixer. Fold in flour mixture. Rinse and drain apples. Fold in apples and nuts. Spread evenly into pan. Bake for 45-50 minutes or until toothpick comes out clean. Allow to cool for about 15-30 minutes.
  5. Flip out onto a serving plate. Spread Brown Butter Frosting over the top. Serve warm.
  6. Directions for Brown Butter Frosting:
  7. In a small sauce pan, brown butter over medium heat. Remove from heat and stir in powdered sugar and vanilla. Stir vigorously. Add 1 Tbsp. at a time of hot water until frosting reaches a spreading consistency.
