Fry the bacon until crisp, then remove to a paper towel lined plate to drain, crumble when cool and set aside.
Lightly toast the oats in a skillet over medium heat just until fragrant, then remove from heat.
Bring water to a boil in a saucepan. Stir in oats and salt. Simmer for about 4 minutes. Add milk, cinnamon, and pecans. Simmer for 2 minutes more or until desired consistency, stirring occasionally to prevent a boil-over.
When oats are done, stir in maple syrup then evenly divide between two bowls. Into each bowl, stir 1 tsp. butter and more maple syrup if desired.
Finally, crumble 2 pieces of bacon into each bowl, serve, and enjoy!
