"This is a vegetarian chili, it's called 'diet chili' because it has no meat."

  1. In a large soup pot saute the garlic, celery, carrots, onion and bell pepper until tender. Do not burn the garlic.
  2. Add; mushrooms, cans of tomatoes, tomato sauce, kidney beans, chick peas, cumin, black pepper, chili powder. Add salt and jalapeno if desired. Bring to a boil and simmer for at least 30 minutes.
  3. Add 2 ounces of cheese.
