  1. preheat oven to 350 degrees.
  2. Line muffin tins and spray with cooking spray.
  3. Mix all ingredients in large bowl (except walnuts and raisins) and mix well.
  4. Once all is combined toss in walnuts and raisins and mix gently.
  5. spoon mixture into cupcake holders and bake for 20-25 min
  6. serve immediately or make ahead and store in airtight container and reheat before serving
