Add a tablespoon of oil in a pan, heat and add onions and bell peppers. Cook until onion is translucent and peppers are soft. Add sausage and brown. Add okra, diced tomatoes, water, and seasonings. Stir well and bring to a boil. Reduce heat to low and simmer for 45 minutes to an hour, stirring occasionally. Add more seasonings if needed. Serve over cooked white rice.
