Place red and green peppers and onion on shallow baking pan. Drizzle the olive oil, then season with salt, pepper and minced garlic; toss well. Bake in oven for 25 minutes, mixing about halfway through.
Cook Al Fresco chicken sausage as directed on package.
Baste inside and top edges of rolls with juice from pepper mixture. Add chicken sausage, peppers & onions, some giardiniera, and fresh mozzarella on top or to the side of the sausage. Put sandwiches in oven just until cheese is melted.
