  1. Preheat oven to 350 degrees.
  2. Prepare a large 24 count mini muffin pan by buttering the bottoms and sides of each muffin cup.
  3. Cut the sausage links into quarters lengthwise and then cut each 1/4 into small slices; set aside.
  4. In a mixing bowl, stir together eggs, milk, flour and baking powder.
  5. Fold in green onions, jalapeno, tomato and sausage.
  6. Gently stir in cheeses, mixing well.
  7. Using a small cookie scoop, fill each muffin cup with batter.
  8. Place in the oven and bake until golden, 20 minutes.
  9. Once cool enough to handle, remove from pan and repeat with remaining batter (unless you have 2 muffin tins). Makes 44 - 48 mini bites.
