  1. 1. Preheat oven to 325 degrees F. Grease and flour 2 8x8 baking dishes
  2. 2. Sift together flour, salt, baking soda, baking powder, and pumpkin pie spice in a large bowl
  3. 3. In a separate bowl, blend the eggs, oil, pumpkin, sugar, and extract until creamy.
  4. 4. Stir wet ingredients into dry until combined, then add in zucchini and nuts. Mix well
  5. 5. Pour batter into prepared pans and bake for 40-60 minutes, or until toothpick inserted into center comes out clean.
  6. 6. Allow to cool in pan on a rack for 20 minutes. Remove from pan and allow to cool fully.
