  1. Heat olive oil in a large saucepan over medium heat.
  2. Add peppers, onion, garlic, and sausage. Cook and stir for approximately 15 minutes until vegetables are soft and sausage is lightly browned.
  3. Prepare grits by adding to 4 cups of boiling water, reduce heat to medium low, cover and simmer for 5 minutes. Once cooked, add salt, paprika, and stir in cheese until melted.
  4. Ladle grits onto serving dishes, top with sausage and vegetable mixture. Sprinkle with additional white cheddar if desired.
