  1. In a small saucepan, melt butter and stir in the flour. Add a pinch salt and white pepper.
  2. Add cold milk all at once. Stir well.
  3. While the sauce is cooking, boil water and cook the pasta according to the package directions.
  4. Cook the sauce, stirring frequently, at medium heat until thick.
  5. Remove the sauce from heat and add in the egg yolks and nutmeg.
  6. Slice the sausage and reheat on the stove-top until heated through.
  7. Drain the pasta and toss with the sauce. Top with the sausage. Sprinkle salt and white pepper on top if more seasoning is desired.
