Chicken Sausage and Shrimp Pasta with Spinach

"On a mission to duplicate a recipe from a local restaurant, I actually made this dish that I actually like better (plus it's a LOT cheaper!) Feel free to substitute broccoli rabe or other greens for the spinach ("just use what's on sale" is the motto in my house)"

  1. Cook pasta according to package directions. Drain. Meanwhile, heat olive oil over medium heat in skillet. Add garlic and cook until fragrant, being careful not to burn the garlic. Add sausage and tomatoes - cook another 5 minutes. Add spinach and allow to wilt. Add shrimp and cook until shrimp is pink and thoroughly cooked. Toss mixture with pasta and top with feta cheese and/or cashews, if desired
