  1. combine all the ingredients in a bowl with your hands until combined. cover and refrigerate over night.
  2. preheat oven to 300 degrees and line a baking sheet with foil.
  3. place cold meat mixture into food processor and process until smooth about 2 minutes. Scraping sides as needed to make sure all is combined.
  4. scrape mixture from food processor onto foil lined sheet. Wet your hands with cold water. Form into a rectangle 1 1/2" thick by 5" wide and about 8" long, re-wetting you hands as needed till you have a nice smooth rectangle.
  5. bake for 30 minutes until center of the loaf reads 155 on instant read thermometer. allow to sit a room temp for at least 15 min.
  6. slice into 1/8 to 1/4" thick slices lay strips on another foil lined bake sheet and broil about 2 minutes, until edges are browned and crispy.
