"This vegan version of the authentic mexican ceviche is the best I've tried! It has great flavor and it's full of healthy vegetables! I prefer to serve it over a tostada (baked or fried corn tortillas) with guacamole!"

  1. Drop the cauliflower in a pot with boiling water for 5 minutes (when it's cooked but still firm), drain it and rinse it with cold water.
  2. Take all of the vegetables and mix them in a big bowl, add the cauliflower.
  3. Add the sauce ingredients, one by one and mix everything together. Add salt to taste.
