"This is an awesome dish based on cassoulet recipes from the south of France, where the recipe has been around for about 700years! Starting with a flavorful pork base, white beans and chicken sausage are added to give this stew/casserole amazing flavour!"

  1. 1. Rinse pork & pat dry with paper towels. Cut and season with salt and pepper. Heat 1 tsp oil in oven-proof skillet over med-high heat. Lightly brown pork on all sides.
  2. 2. Reduce heat to medium, stir in onion and 1/4 t salt. Cook until onion is clear, about 5min. Stir in thyme, garlic and bay leaf and cook about 30seconds. Stir in broth, tomatoes, and wine. Bring to simmer. Cover, reduce heat to med-low and, simmer for 30min.
  3. 3. Stir beans into pot and continue to simmer, covered for 20-25min longer.
  4. 4. At this point, you can do one of two things. To make this a stew, add the chicken sausage and let simmer another 20min until cooked through. (I also grill the chicken sausage, slice and add at this point for 15min as another option.) OR, you can top with torn bread that has been mixed with olive oil and place oven-proof pot into oven to bake uncovered at 450F for 15 min.
