Mango Tofu Tacos


"I grew up vegetarian loving Mexican food. As a kid, we used to have bean tacos. Inspired by a family friend, and by my maturing taste buds, I created this recipe to liven up my vegetarian taco experience. This is, of course, just the filling, and you can add whatever toppings to your taco that you want. Though, this recipe tends to match better with red taco sauces than with green ones. Extra filling can but reheated later or eaten cold as a mango tofu salsa. Enjoy!"

  1. Cover the bottom of a pan in a thin layer of cooking oil, bring to medium heat.
  2. Add pepper, onion, garlic and saute until almost brown. Add tofu and stir.
  3. Add chopped cilantro stems, and about half of the needed taco seasoning along with about a teaspoon each of cumin and coriander, saute for 3-5 minutes before stirring.
  4. After stirring, add mangos and the rest of the taco seasoning, and wait 3-5 minutes before stirring.
  5. If desired, add chili powder, cumin, coriander and salt to taste.
  6. Completely mix all the ingredients together and let simmer on low heat until most of the liquid has evaporated.
  7. About a minute before serving, add the cilantro leaves and stir.
