"I concocted this dish using my family's recipe and another recipe I found online as guidelines, while also putting my own spin on it. What it turned into was the best minestrone my family has had yet! My husband likes his soups with hardly any broth; thus, 'hearty minestrone'! Enjoy!"
Cover the bottom of a 10 inch frying pan with the oil over medium heat. Saute onion and garlic for 2 minutes, then add the ground beef and cook until browned. Meanwhile, cut up the carrots.
In an 8 quart stock pot, add the ground beef mixture, chicken broth, diced tomatoes, tomato sauce, water and carrots. Bring to a boil, then simmer for 10 minutes. As those are simmering, cut up the rest of the vegetables.
Add the zucchini, bell pepper, oregano, basil, salt and pepper and simmer for another 10 minutes or until the carrots are cooked all the way through.
Finally, add the broccoli and macaroni and simmer for another 10 minutes (or until the macaroni is al dente). Once served, sprinkle Parmesan cheese over the top, as desired.
