On medium heat, add 1 Tbsp olive oil to a large skillet, add onion, and cook for about 15-20 minutes or until the onion has started to brown and caramelize; set aside.
Coat a 10"x15" baking pan with olive oil spray, and spread the pizza crust out in the pan.
Lightly coat pizza crust with olive oil spray, and pre-bake for about 5 minutes. Remove pan from the oven, and add the onions spreading evenly over the crust. Top with the meatballs, water chestnuts, peaches, and red bell pepper strips.
Bake for about another 15-20 minutes or until the crust turns golden brown.
While pizza is cooking, whisk together all of the sauce ingredients until you have a smooth, drizzling consistency.
After you remove the pizza from the oven, drizzle the peanut sauce over the crust, and then garnish with the chopped peanuts and cilantro.
