  1. Preheat oven to 350 deg.
  2. Mix all ingredients together using an electric mixer in a large mixing bowl.
  3. Line two cookie sheets with parchment paper.
  4. Divide dough into two pieces and shape each into a shallow loaf on each cookie sheet.
  5. Bake for 20 minutes.
  6. Remove loaves from pans using parchment paper to slide onto cooling racks and let cool 10 minutes.
  7. Place loaves onto cutting board and using a sharp bread knife, slice loaves into 1-inch thick pieces. Place pieces back onto cookie sheet on their sides.
  8. Bake for 10 more minutes to slightly toast the biscotti.
  9. Remove from oven and allow to cool completely before storing in tins.
