  1. Preheat oven to 450 degrees. Evenly coat a large baking sheet with olive oil and set aside.
  2. Melt butter and hot sauce in a small saucepan over low heat. Whisk until butter is melted Remove from heat and let cool to room temperature
  3. In a bowl combine ground chicken or turkey, eggs, minced celery, breadcrumbs and hot sauce/butter mixture. Mix until well combined. Roll chicken/turkey mixture into 1-inch round balls and place on oiled baking sheet. Bake 15 minutes.
  4. Remove from oven and let sit 5 minutes. Arrange on a platter and drizzle with hot sauce.
  5. Serve with tooth picks; have a side of bleu cheese dressing and extra hot sauce for dipping. Add celery sticks on the side
