"This is a simple recipe for potatoes au gratin (or, as I called them as a kid, "augh! rotten potatoes") with a rich and tasty cheese and spinach sauce. Can either be a entrée or a side dish."

  1. Preheat oven to 200°C (400°F). Grease baking pan with butter.
  2. Peel and slice the potatoes very thinly. Combine with onions in baking pan and mix evenly.
  3. In a pot, boil down the white wine until reduced to half its volume. Reduce heat and add cream and milk and whisk together.
  4. Slowly add cheese to pot while on medium-low heat, continually whisking to make sure cheese melts evenly.
  5. Add salt and pepper and herbs to cheese sauce, then whip the egg into the sauce.
  6. Add the spinach and whisk continually until melted and well blended.
  7. Pour the sauce over the potatoes and onions. If needed, stir the potatoes and sauce together to make sure it is evenly spread out.
  8. Cover the baking pan with aluminum foil and bake for 90 minutes.
