"I couldnt find a recipe I liked so here is my family's version of "curried" chicken. It brings back memories of a childhood spent enjoying food there were very few dishes I wouldnt eat vegetables or not."
Mix chicken with your spices until curry powder is wet and sticks to the chicken.Turn your stove on high, heat the cooking oil in a large iron skillet with 2 tablespoons of curry powder until the oil is hot and curry powder changes color. Add your chicken to the hot oil mixture, then reduce the heat to medium add the water,then add your diced potato and ginger. Cover the pot and let simmer.Stir the ingredients when needed, tasting the gravy after about 20 minutes. Spice to your liking with extra seasonings if needed allow chicken to cook undisturbed for the last 15 mins. Reduce gravy if it is too runny and let cool before serving.
