Heat oven to 425. unroll the crust onto work surface. cut into 4 5in rounds. Place rounds on parchment lined cookie sheet.
In med bowl, mix, sugar and cinnnamon, toss in apple slices. put some apple mixture into the center of each round. Fold 1/2 inch of crust over filling, pinching slightly so that crust lays flat on apples.
Bake 18-20 min until golden brown. Drizzle 2 tsp caramel over each pastry. Serve warm with vanilla ice cream if desired.
