  1. Preheat oven to 375 degrees. Slice squash. Boil in lightly salted water until tender. Drain. Set aside.
  2. Melt butter. Add onions, celery, bell peppers, garlic, green onions, and shrimp. Saute about 5 minutes or until vegetables are wilted and shrimp is pink.
  3. Stir in squash and mix well. Season to taste. Add parsley and Italian bread crumbs.
  4. Place squash mixture in a buttered baking dish. Top with additional bread crumbs and Parmesan cheese. Bake 20 minutes or until golden brown.
