  1. Prep your kabobs by cutting a cored/peeled pineapple into long strips and then cubes.
  2. Slice sausage into 3/4" pieces and onion into wedges.
  3. Assemble onto wooden sandwich skewers; onion, then sausage, then pineapple.
  4. Heat grill.
  5. Prepare sauce by combining ketchup, brown sugar, and vinegar and set aside.
  6. I recommend a stove top grill plate or counter top grill for cooking. Grill all sides of kabobs until lightly charred.
  7. Place on plate and drizzle sauce over top of kabobs.
  8. Serve hot or room temperature.
