Sweet Potato Walnut Bake

  1. Peel and slice potatoes into 1/4 inch slices.
  2. In a 2 Quart baking dish, layer half the potato slices and half the peach slices.
  3. In a small bowl, combine brown sugar and ginger.
  4. Sprinkle half of mixture over potatoes and peaches.
  5. Repeat layers
  6. Dot with butter.
  7. Cover and bake at 350 degrees for 30 minutes, stirring once.
  8. Uncover and sprinkle with walnuts.
  9. Bake uncovered for about 15 additional minutes or until potatoes are tender.
  10. Spoon the cooking juices over potatoes and peaches before serving.
