  1. 1. Preheat oven to 350 degrees F.
  2. Lightly spray large deep dish pie plate with cooking spray.
  3. 2. Cut tomatoes in 1/2 - squeeze out as much liquid as possible then dice tomatoes.
  4. 3. In large bowl mix together Ricotta, Mayo, Mozzarella cheese and horseradish. Whip in egg and egg whites, thyme, salt & pepper.
  5. 4. Gently stir in tomato and onion.
  6. 5. Pour mixture into prepared pie plate.
  7. 6. Mix cheddar cheese and bread crumbs together and sprinkle on top of pie filling.
  8. Bake for 45-50 minutes. Remove from oven and let stand for about 10 minutes before serving.
  9. I like to serve a slice over a bed of baby spinach or other mixed greens.
