"Potatoes aren't good for dieters, so I've made this recipe as a yummy alternative. This recipe is great, but not so much so without the added greens. Make sure to include some extras if you don't like the ones thaf I've added to this recipe. Basically anything that tastes good on a baked potatoe will complement this dish nicely."

  1. Mix everything into your food prosseser or blender and blend till creamy. You will need to check on the mixture often to push it down so that it blends evenly.
  2. Break two romaine leaves into two parts and place on plate where the side will go.
  3. Place 1/2 cup of mashed cauliflower onto leaves.
  4. This recipe makes 3.25 half cup servings.
