"Brunch is always a fun dish to serve on a Sunday afternoon for friends and family. I could do this every day, but for most people the weekends are the best time to get together. I love that these are fast and take very little overseeing! If you're like me then you will enjoy not just eating, but making this frittata too!"

  1. Defrost bacon in microwave for about two minutes. Let sit for 2 minutes before dicing.
  2. Heat skillet over medium heat.
  3. Dice red bell pepper, jalapeno, drain sweet corn(if using canned, remove from cob if using fresh), slice potatoes, and grate cheese.
  4. Saute red bell pepper, jalapeno, sweet corn, and bacon in heated skillet for about 3 minutes.
  5. Crack eggs into medium size bowl. Add milk or cream and beat well for about two minutes. Pour into skillet covering veggies. Top with cheese. Reduce heat to low and cover. Cook for 10 minutes or until middle sets and the edges are golden.
  6. Remove from skillet and transfer to cutting board. Sprinkle with cracked black pepper and let rest for two minutes before cutting into pizza like slices. Serve and enjoy!
