Super Easy Slow Cooker Chicken Enchilada Meat

  1. Put all the ingredients except the Chicken breasts, in a bender and thoroughly blend. Place the chicken in the slow cooker and cover with the Enchilada Sauce. Cook on low 8-9 hrs or on high 4-6 hrs. Shred the meat with two large forks (or place half at a time in a stand mixing bowl and beat with the paddle attachment for 1 min. or less-it works!!!).
  2. Use in your favorite Mexican recipes. Pork or beef can be substituted for the chicken.
  3. *This sauce is also a nice Red chile Sauce. I use it all the time to make Enchiladas, Casseroles and even breakfast dishes. Just blend it all like the recipe states and then simmer it on the stove until it thickens. If you have leftovers they store beautifully in the frig or freezer.
