In a bowl combine graham cracker crumbs and sugar. Gradually add melted butter. Stir. Press in bottom and sides of 8"x11" (glass or metal) pan. Optional (because it doesn't seem to make it much less crumbly): Bake crust at 350 degrees in oven 10 to 25 minutes. Cool.
Cream softened cream cheese. Beat in the sweetened condensed milk, vanilla extract and the lemon juice until the batter is smooth; pour the batter onto the graham cracker crust. Cover and chill in the refrigerator for at least 2-3 hours.
May be topped with strawberries, cherries, blueberries or drizzled with chocolate, but delicious plain!
