  1. In 12-inch skillet, heat oil over high heat. Add bell pepper, zucchini and onion; cook and stir about 2 minutes or until vegetables are crisp-tender. Stir in salsa and beans; cook until hot.
  2. Top mixture with cheese, olives and green onion; continue to cook to allow sauce to thicken slightly.
  3. Serve in bowls and use tortillas as your spoon, enjoy.
