  1. Preheat oven to 350F. Assemble pie crust in pie pan.
  2. Saute onion in oil until it softens. Squeeze all the water out of the spinach, then add to the pan with the Tbs flour, salt, pepper, and garlic.
  3. Crack the eggs in a separate bowl, then add the feta cheese. Mix well.
  4. Add the spinach mixture to the egg mixture and mix well.
  5. Pour the spinach mixture into the pie crust. Top with mozzarella cheese if desired. Bake for 30 minutes, or until done.
